Chipotle Chicken Burrito Bowl: Prep Time: 10 minutes. Cook Time: 15 minutes. Makes 8 servings. You Will Need: 1 pkg. McCormick Seasoning Mix, divided. 1/2 cup sour cream. 2 tbsp. oil. 1-1/2 lbs. boneless chicken thighs or breasts, cut into 1-inch cubes. 1 medium bell pepper, thinly sliced. 1/2 cup water. 4 cups hot cooked rice. Assorted Toppings: shredded lettuce, shredded cheese, chopped cilantro, corn, black beans, onions, salsa or chopped avocado. Directions:1. Mix sour cream and 2 teaspoons of the Seasoning in small bowl. Set aside. 2. Heat oil in large skillet on medium-high heat. Add chicken and bell pepper; cook and stir 6 minutes or until chicken is no longer pink.3. Add remaining Seasoning Mix and water to skillet; mix well. Bring to boil on medium heat. Cook and stir 2 minutes or until chicken is cooked through. 4. Divide rice between 8 serving bowls. Top with chicken mixture. Serve with seasoned sour cream and desired toppings. Kitchen Tips: Substitute steak, pork, shrimp or black beans in place of the chicken. Build your bowl with shredded lettuce or assorted sautéed veggies instead of rice.
