This D.O.C. Venezia Pinot Grigio from Tenuta Polvaro is harvested at 100–120 q.li/ha in early September and crafted with gentle pressing, cold settling, and 8–10 days fermentation at 18°C. Aged 4 months in stainless steel with bâtonnage, it shows pale straw-yellow with greenish reflections, aromas of pear, white peach, and acacia flowers, and a dry, fresh, balanced palate with a persistent finish. Perfect with seafood, risottos, and fresh cheeses.
