Makes 36 mini. 20 regular, or 12 giant cookies. You Will Need: 1 egg; 6 tbsp unsalted butter, softened (not melted). Instructions: There are three ways you can make our cookies: using a stand mixer, using a hand mixer, or using a bowl and spatula... whatever is easiest for you! 1. Beat together the softened butter and egg in a large bowl using a mixer on medium-low speed. If you aren't using a mixer, use a whisk for this part. 2. Add cookie mix to the bowl and beat on medium-low speed for 30-60 seconds to dissolve the organic brown sugar. If you aren't using a mixer, use a spatula to fully combine ingredients and thoroughly mix for 30-60 seconds. Use your hands to form a ball of dough, if needed. 3. Using a small cookie scoop or spoon, drop dough by the tablespoon for smaller cookies or two tablespoons for larger cookies. 4. Bake at 350F for 9-11 minutes for smaller cookies and 12-14 minutes for larger cookies. Cookies will be puffy right out of the oven, flattening as they cool to create a deliciously chewy, soft treat, with just the right amount of crunch and flecks of brown sugar throughout! Pro Tip: Sprinkle with flaky sea salt for a decadently sweet and salty cookie! Vegan: Use 1/4 softened vegan butter and 1 flax egg (1 tbsp ground flax and 3 tbps water mixed together. Let rest for 5 minutes). Follow normal mixing instructions and bake for 11-13 minutes.
