Dried beans are a natural food and should be cleaned like any other vegetable. Sort out any unwanted material and rinse well. Cooking Instructions: Soak: Dry beans may be soaked to reduce cooking time. Place beans in a large deep pot. Add clean water to cover beans by at least 2 inch. Soak beans (methods indicated below). Drain and discard soaking water before cooking. Overnight Soak: Let beans and water stand overnight in fridge or at room temperature for at least 6 hours. Quick Soak: Bring the pot of beans and water to a boil. Boil for 2-3 minutes. Remove from heat, cover and let it stand for at least 1 hour. For areas with hard water, which may lengthen cooking time, add 1/8 tsp of baking soda per pound of beans or use bottled water.
