Directions

You Will Need: 8 corn tortillas; 8 ounces (about 1-1/2 cups) shredded Monterey jack cheddar cheese' 1 pouch Simply Organic Red Enchilada Simmer Sauce. Directions: 1 Preheat oven to 400 degrees. Lightly grease a 3-quart baking dish. 2 While oven is preheating, wrap tortillas in foil and warm in oven for 5 minutes. 3 To assemble enchiladas, place 2 tbsp cheese into each warm tortilla. Roll each tortilla and place seam-side down in baking dish. 4 Cover tortillas with simmer sauce. Sprinkle with remaining cheese. 5 Cover with foil & baked 5 minutes more. Serve with your favorite toppings. Chef Suggests: Substitute shredded cooked chicken or beef for the cheese in the filling.
